This is my photo showing my celery re-grow project. I was thrilled to watch what happened after I put the bottom of the celery into the ground.

Almost half of our food is wasted in the United States, according to FoodPrint. What can we do to reduce our enormous food waste problem? Many of us can compost. Composting is important because it puts nutrients back in the soil and it reduces the amount of methane exuded from the landfill.

Re-using food waste we can be an adventure, a fun way to reduce what you put in your compost bin. Consider eating your food scraps, or collecting them to make food “stock” which can be used to make soup or other dishes. OR, re-growing them! I have carrot greens growing from that part of the carrot we would usually throw away. They are flowering now, and a joy to watch. I also re-grow celery and snip the tips for salads and soups.
